From high in the Andes surrounding Salta come Piattelli's Cafayate wines, grown at an elevation of over 1,795m. The distinctively colourful north western Argentinian mountains are formed of many geological layers.
The splendour of this area, with its pure water and extreme thermal amplitudes, is that it produces grapes bursting with flavour, making this not only one of the most beautiful, but also one of the premier grape growing regions in the world.
The grapes were gently destemmed and pressed. The free-run juice was cold static clarified for 14-24 hours at 8°C.
The must was separated from the lees, leaving the freshest juice. This was vinified with selected yeasts in stainless steel tanks at controlled temperatures between 12-16°C.
Once fermentation was complete, the wine was transferred to another tank to rest until bottling.
