
Jester McLaren Vale Cabernet Sauvignon, 2018
A Cabernet Sauvignon made from 20-year old vines planted at the southern end of McLaren Vale in South Australia. Lovely weight, lots of fruit including blackcurrant and black cherry and with hints of tobacco, dried herbs, and dark chocolate.

Viticulture:
The grapes comes from 20-year-old vines planted at the southern end of McLaren Vale, about 4km east of the coastal town of Port Willunga.Â
At 25m above sea level, the soils are heavy grey loam mixed with black Biscay clay and sit above ancient Gnaltinga formation bedrock.Â
Strong vine growth is tempered by dry summer winds and cooling afternoon sea breezes, allowing the grapes to develop pure, bright and savoury fruit flavours.
Winemaking:
20% of the grapes were dried using the old Italian Appassimento technique on racks prior to fermentation, for approximately seven to eight weeks.
The remaining grapes were fermented on skins for ten days at cool temperatures to enhance pure berry fruit characteristics.Â
The separate batches were blended and racked to old French oak for 14 months before bottling.
