Viticulture:
Made from Grenache (66%) sourced from three 30 to 60-year-old vineyards taking in the southern Barossa Valley (Lyndoch foothills) and from two northern Barossa Valley parishes (Stockwell and Moppa).
Mourvèdre (25%) is the spice rack in this blend. It comes from two special vineyards, one in the western Barossa Valley (Gomersal) and one in the north (Ebenezer).
Finally, a splash of Eden Valley field blend incorporating Riesling, Gewürztraminer and Kerner grown in limestone rich soil.
The final product reflects a wide range of microclimates and geological distinctions that makes for complexity.
Winemaking:
Made as a true rosé, each vineyard is picked earlier than grapes for red wine with a view to retaining natural acidity and relying on the old vines to supply ample flavour despite the early harvest.
Each vineyard will see between 6- and 18-hours’ skin contact, which during this early ripeness imparts only modest colour to the blend.
Cold fermented in a temperature controlled inox fermenter using a combination of indigenous and selected yeasts to develop and protect delicate aromas.
As a stylistic choice, no fining agent is used throughout the winemaking process and only minimal sulphur dioxide is added prior to bottling.
