Meet the maker: Viña Echeverría
Region: Malleco, Southern Region – Chile
Grape(s): Pinot Noir (100%)
12.5% ABV / 750ml / Vegetarian / Vegan
Viticulture:
The vineyard is located in the Malleco Valley, 340 miles south of Santiago.
It is considered to have a marginal climate for viticulture, with high rainfall of 1,300mm a year and a short growing season. However, the region enjoys high sunlight hours which encourages ripening of the grapes. The diurnal temperature differences are marked, the warm days give way to considerably cooler nights, which slows the ripening of the grapes and produces fresh wines with racy acidity, complementing the varietal character.
The soils are volcanic in origin and tend to be red clay and sandy, with good drainage, an essential attribute to cope with the high rainfall in this region.
The lower levels of ground water encourage the vines to develop deep root systems, produce less foliage and produce low yields of fruit, which is concentrated with excellent structure.
Winemaking:
The grapes were carefully selected before being crushed, destemmed and chilled to 8°C.
Cold skin maceration took place for eight hours to extract the delicate pale pink colour.
Gentle pneumatic pressing was followed by 24-36 hours of sedimentation at 8°C.
Fermentation took place with selected yeasts in temperature-controlled tanks at 13-18°C and lasted for 25 days.
